Quick and healthy Sunday roast

Whilst you are getting ready for the weekend we thought that we'd help you get super prepared for Sunday. If it is your turn to host the family roast, or if you just fancy a hearty meal after training, then this is a super quick and healthy alternative to a stodgy roast dinner. 

You need 1 oven tray and everything goes in this, that's minimal washing up for you. This recipe makes a meal for two, add extra depending on how many people you have invited.

Chicken and roasted vegetables

The vegetables in this recipe are options, tailor-make your dinner and use your favourites. 

You will need:

2 skinless chicken breasts

150ml of chicken stock (the low sodium variety)

Around 5-8 new potatoes, depending on how many you can eat. Halve these

2 sliced carrots, batons or rounds...your choice

1 stick of celery (chopped up)

1 courgette (chopped up)

1 red pepper (chopped up)

1 tsp of chopped rosemary and thyme

2 tsp olive oil 

To do:   

Preheat the oven to 180'c for a fan over/200 'c/Gas 6

In an oven proof tray, add the potatoes, vegetables, oil and rosemary and thyme - shake the veg around the oil to ensure it is covered and season to taste

Roast this for 30 minutes

Take out of the oven, give the veg a stir and then add the chicken breast. Cook for a further 15 minutes

Add the chicken stock and cook for a further 5 minutes or until the chicken and vegetables are cooked through

Serve and enjoy!
